Being a Minnesotan, I cherish the abundance of seasonal produce I can buy now that’s not necessarily available during the winter. It’s fresh, affordable and delicious! We need to treasure this time, as long as we can, before frost arrives.
I came across some recipes on Real Simple’s website for fresh corn. The photo made my mouth water and I thought, “that’s it, I need to pass this on.”
I will admit, one of my favorite ways to eat corn is on the cob with butter, cayenne pepper, and sour cream. Although you can’t go wrong with butter, salt, and pepper too. What I like about the following recipes is that they include numerous ways to eat corn, not just off the cob. (Not everyone likes to dig in and get kernels stuck between their teeth.) Plus, variety and exploration in food is good!
